I recently shared the Celebrate Your Plate Vegetable Frittata recipe to be featured in my local newspaper. I was contacted by someone who had a question about the recipe. She said that she had spinach and eggs that she needed to use up from her senior box and did not want to waste them. She was very excited to try this recipe and use it when she had eggs that needed used and to also try other veggies that she has.

As part of this SNAP-Ed series, we did a tasting with bell peppers. Several weeks later, one child who had been very apprehensive to try them, told me that he didn't like them before but now he brings them almost every day for lunch at school.

After presenting a SNAP-Ed program about eating different fruits, a student shared that she went home and told her mother about how important it was to eat all the colors of the rainbow when eating fruit. The next day they went shopping and chose many different colors of fruit to try, even some new ones they had never had before.

Through the SNAP-Ed classes, an elderly participant learned to follow MyPlate and started preparing healthier foods for herself. She found that she was still able to eat inexpensively and feels much better physically and mentally.

The SNAP-Ed participants reported that they had been reading food labels more frequently and as a result, chose to eat certain foods over others. They also reported that they have been watching their sodium intake more closely since they began this program; this included eating more fruits and vegetables as well as less processed food.
